Nerpy's Jerk Salmon and Festival

Jerk Salmon Served with Jamaican Festival

This is a quick and easy recipe which from prep to plating should only take you about 30 minutes or less.

Ingredients:
Atlantic or Pacific Salmon (whichever you prefer but try to buy Canadian Eh.) Support Local!
Garlic
Rosemary sprigs
Nerpy's Authentic Jerk Seasoning
Oaks Organic Coconut Oil
Shallots

Directions:
Pat the salmon dry and apply Nerpy's Jerk Seasoning. You should always season to your preferred taste
which means you can add more or less Jerk seasoning for more or less heat if you like.
Saute the shallots until translucent, remove from oil and set aside
Use the same skillet to fry the salmon, you can add a little bit more oil if there is not much left after removing the shallots
Fry the salmon skin side down first for approximately 1-2 minutes then flip and do the same for the other side
Add garlic and rosemary to the oil while frying. Put in oven on broil high for maximum 7 minutes Remove from oven and serve with the sauted shallots.

Plating:
Serve with Rice/ Quinoa/ Bulgar/ Couscous etc. I served with Jamaican festivals, Plum tomato's and cucumber.
