Spatchcock Spicy BBQ chicken served with herbed potato & Cucumber Salad
Nerpy's Spicy Tropical BBQ Spatchcock Chicken
Ingredients:
1 Whole Chicken
1 Jar of Nerpy's Green Seasoning or you own All Purpose Seasoning you can use our wet or dry rub
Nerpy's Spicy Tropical BBQ Sauce.
Oaks Extra Virgin Coconut Oil
3 or 4 Potatoes
1 whole cucumber
1 tomato
Spatchcocking (butterflying) a chicken, or any poultry, is a great way to flatten the bird and get even cooking in less time than if you roasted them whole. With this whole grilled chicken recipe, the backbone is removed and the chicken is flattened then pan fried and finished in the oven, which enables it to cook quickly and evenly.
Directions:
Rinse and pat dry the chicken.
Cut the chicken down the middle of the chest, flatten and then remove the backbone.
A jar of Nerpy's Green Seasoning is more than enough to prepare 2 pounds of boneless chicken or 4 pounds of bone-in chicken, but you can easily double or triple the recipe for a larger bird.
For our preparation we used 10 teaspoons for the entire chicken (the teaspoon fits easily through the mouth of the jar). Rub the green seasoning in all over the bird in every nook and cranny. Let it sit and marinade for about 30 minutes. You can also leave it to marinate longer if you have the time.
Add the Oaks coconut oil to your skillet and bring to a medium heat, so as not to burn the chicken when you put it in the pan.
Add the entire chicken skin side down into the skillet along with a couple cloves of garlic and thyme sprigs to season the oil. Cook for about 10 - 12 minutes. Give your skillet a little shake every so often to prevent the chicken from sticking to the pan. Remove the chicken from the skillet turn it over a place in the skillet skin side up and repeat. Cook for another 10 - 12 minutes. Make sure your chicken is browned on both sides.
Turn on your oven and pre-heat to 375 degrees F.
Once your oven is up to temperature place your skillet with the chicken inside the oven and allow it to cook for about 20-25 minutes or until the internal temperature at the thickest part of the chicken gets to 160 degrees F.
Once the internal temperature of the chicken reaches 160 degrees F., remove the skillet from the oven and then Baste the chicken with Nerpy's Spicy Tropical BBQ Sauce. This is not your average Barbecue Sauce. The flavor is incredible and it adds a nice spicy sweet heat to the bird.
While the chicken is in the oven prepare your potato's;
Cut and slice the potatoes into wedges, rinse and drain excess water. Add your dried herb spices - basil, thyme leaves, black pepper, garlic powder etc...and a little sea salt to the wedges. You can either deep fry or cook them in the oven on a baking sheet, whichever way you prefer.
This is a nice and easy meal to prepare and to cook. You and your guests will definitely be pleased with this dinner.
