Smoked One Drop Frenched Rack of Lamb
Charcoal Smoked One Drop Frenched Rack of Lamb
This one of the simplest and easiest recipes for a delicious Rack of Lamb and a perfect summer time, BBQ, meaty delight!
Ingredients:
Racks of lamb
Nerpy's One Drop Green Seasoning
1 tablespoon or a few twigs of fresh Rosemary
1 tablespoon of olive oil
Directions:
Add 4 teaspoons of Nerpy's One Drop Green Seasoning to 1 rack of lamb
Rub seasoning into lamb racks
Allow racks to marinate refrigerated overnight or for a few hours
Grilling:
Prepare the grill for direct cooking over medium heat (350° to 450°F).
Take the lamb out of the fridge to sit at room temperature for 15 to 30 minutes before grilling.
Sear the lamb, bone side down first, over direct heat, with the lid closed, until lightly browned, 2 to 4 minutes, turning once (watch out for flare-ups).
Move the rack of lamb to indirect medium heat, close the lid, and cook to your desired preference for how you like your meat, our preference is medium - 30mins. Grill for another 15 minutes for medium rare.
Remove from the grill and let rest for about 3 to 5 minutes before cutting into individual chops. Plate and serve with your choice of sides - Rice, Quinoa, mash potato, or salad.
We also did some gilled lobster with this for a Surf and turf style meal, however the Lamb was truly the star of the show and the main attraction for this recipe.
