Boston Beach Style Jerk Pork



Jerk Pork started in Jamaica in a community call Boston in the parish of Portland. Key to making Jerk Pork is the spices used (Pimento, Scotch Bonnet Pepper, Thyme) along with Pimento wood to lay it on and charcoal. The smoke from the charcoal and the flavor from the Pimento wood mixed with the pepper, thyme, scallion and in some cases beer, yes beer. You can season the pork using a purchased sauce VS adding the ingredients individually. 
We use Nerpy's Authentic Jamaican Jerk Seasoning.  This is the real deal!
  
Ingredients: Pork chops, Nerpy's Jerk Seasoning, cole slaw

Directions:
Set the meat aside to marinate.  You can marinate for a short as an hour or overnight if you like(|this is my preference). 
Heat the grill Use indirect heat to prevent blazing. This prevents the meat from burning. Thickness of the meat determines how quickly it cooks. My case 45 mins each side. 
I don't use any other sauce like BBQ or Ketchup. 
The seasoning and fire should give it the taste.

Cut up when completed. 
Serve with bread / rice/ rolls or in my case fried dumplings along with coleslaw
