Image
Stuffed Jerk Chicken Breast with Fennel, Garlic, Kale, Raisins and Shallots The good thing about stuffed chicken breast is you can stuff it with whatever fruit and veggie you want to try. I am using Shallot, Kale, Fennel, Raisin(you can substitute raisins with cranberries if you prefer). Ingredients: Boneless skinless chicken breast Fennel Garlic Kale Nerpy's Authentic Jerk Seasoning Oaks Organic Coconut Oil Raisins Shallots Directions: Cut up the Fennel, Garlic, Kale and Shallots Saute and let it sit to cool Cut a pocket in the chicken breast. You do this by laying it on the flat side. Insert a paring knife in the thickest side as shown in video. Make sure the pocket you created is wide and deep enough to take the stuffing. Stuff your fruit and veggies in. I use a toothpick to prevent the stuffing from falling out. Fry for a few mins to seal up the pocket and give the breast some color and flavor. You may also have to move them around the grill, away from hot spots if you have them. This method will ensure the oil dripping does not burn the wing...
